Easy Peasy Salted Egg Shrimp :)

     Easy Peasy Lemon Squeezy. That's one of River's favorite expressions. And it also aptly describes this dish. Super easy to make and has only a few ingredients. :) This version is on the dry side because that's how she likes it.



     Start by peeling and de-veining your shrimp then marinating it in a teaspoon of soy sauce, half a teaspoon of salt and a tablespoon of cornstarch. (Of course you can also skip the de-shelling and de-veining if you like)




     Dredge the shrimps in cornstarch then fry. Be careful not to overcook. A minute or two is all it takes.





     Set aside. 





     For the sauce, remove the oil from pan then heat a stick (or less!) of butter. Add in  2-3 cloves of minced garlic.





      When fragrant, add in the mashed salted egg yolk. I used the eggyolks from 4 salted duck eggs.

     Wait for it to bubble and froth and then add in the shrimp. 




     Mix well together then serve. 




*IF YOU'RE MAKING IT FOR ADULTS, YOU CAN ADD CHILLI AND CURRY LEAVES

*THIS WAS MADE FOR RIVER'S TASTE SO I DIDNT PUT EXTRA SALT OR PEPPER. BUT YOU CAN ADJUST THE SEASONING TO YOUR LIKING. :)

*PLEASE DONT THROW AWAY THE WHITES. YOU CAN USE THEM FOR OTHER DISHES.
